Title: Stuffed Plaice Rolls

1mdCourgette, grated
2mdCarrots, grated
4tb(60ml) fresh wholemeal breadcrumbs
1tb(15ml) lime or lemon juice
4 Plaice fillets
  Salt & black pepper

* Plaice fillets are a good choice for families because they are economical, easy to cook and free of bones. If you prefer, the skin can be removed first * Preheat the oven to 200øC/400øF/Gas 6. Mix together the carrots and courgettes. Stir in the breadcrumbs, lime juice (or lemon juice) and seasoning.

Lay the fish fillets skin side up and divide the stuffing between them, spreading it evenly.

Roll up to enclose the stuffing and place in an ovenproof dish. Cover and bake for about 30 mins, or until the fish flakes easily. Serve hot with new potatoes.

Tip: This recipe creates its own delicious juices, but for an extra sauce, stir chopped fresh parsley into a little low fat fromage frais and serve with the fish.
